Party Potato Truffles


Party Potato Truffles

Left over mashed potatoes never tasted better or sweeter!

Ingredients 

  • 1 cup milk chocolate chips 
  • 1/2 cup cooled mashed potatoes (unseasoned)
  • 1/2 tsp vanilla extract 



Directions

  1. In a small bowl, melt chocolate chips in the microwave at medium power or at low temperature on stove top.

  2. When they have melted entirely, stir well into mashed potatoes. Add vanilla and stir until smooth.

  3. Place mixture in the fridge and cool until firm (about one hour or more).

  4. Take about 1 Tbsp size of potato mixture and roll into balls with your hands, then roll into desired topping and  place on cookie sheet and transfer to fridge for about one hour or more, until firm. 

* Will keep in fridge for approximately one week. No one will know they're made out of potatoes. This fun recipe allows you to try many different variations. 




Tips & Variations

Replace regular milk chocolate chips with:

>Melted butterscotch, rolled into crumbled pecans, skor chips or ground walnuts 

>Melted mint chocolate rolled in shredded coconut or sprinkles (great for Christmas, ground M & M's

>Melted white chocolate rolled in macadamia nut pieces, ground pecans, peanuts or skor chips

Toppings:

1/2 - 1 cup shredded coconut, cocoa powder, icing sugar, skor chips, minty crushed M & M's, chopped nuts or sprinkles. The list is endless.
