Potato Biscuit
These fluffy morsels are easy and a great substitute for regular bread

Ingredients
- 1cup flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/4 cup margarine or shortening
- 1 cup mashed potatoes
- 1/3 cup milk

Directions
- Preheat oven to 425 degrees F.
- Combine flour, baking powder and salt. Cut in margarine until mixture resembles cornmeal and stir in mashed potatoes.
- Add milk, stirring with fork until mixture comes together in a ball.
- Turn out on floured board and knead lightly (about 6-8 times). Roll out dough with floured rolling pin to thickness of 3/4" and cut with floured cookie cutter.
- Place on ungreased cookie sheet and bake at 425 degrees for 10 -14 minutes or until golden brown
- Makes 10 - 21/2" biscuits.
Tips & Variations
Add a little cheese on top after biscuits come out of oven for added flavour. Substitute biscuits for sandwich bread.
